Red bell pepper, also known as tatase in Yoruba, is a common ingredient in Nigerian soups and stews. It gives soups a reddish-fresh look and flavor, and adds thickness, color, and sweetness. Tatashe peppers are usually red, but they can also be green, yellow, or orange. They are rich in sugar (fructose and glucose), which explains why you can eat them raw.
