African Jollof Rice
It is impossible to say which is the best Jollof rice as there are many different regional varieties and personal preferences. However, some of the most popular Jollof recipes come from West Africa, particularly Nigeria, Ghana, and Senegal.
Ingredients:
- 2 cups of long-grain white rice
- 1 large onion, diced
- 2-3 cloves of garlic, minced
- 1-2 red bell peppers, diced
- 2 tablespoons tomato paste
- 2 tablespoons vegetable oil
- 2 tablespoons of any type of curry powder
- Salt and pepper, to taste
- 2 cups of chicken or vegetable broth
- 2 cups of water
Preparation:
- Heat the oil in a large pot or Dutch oven over medium heat.
- Add the onions and bell peppers and cook until the vegetables are softened about 5 minutes.
- Add the garlic and cook for an additional minute.
- Add the tomato paste and curry powder and stir to combine.
- Add the rice and stir to coat with the tomato paste mixture.
- Pour the broth and water and season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked.
- Fluff with a fork and serve.
